Let Me Feed You: Shameless Corn By Mary Ann Rivers
There are experiences in this life that can’t be fully enjoyed unless you let loose, completely, of dignity and shame and self-consciousness so that your body has free reign to simply take-in all the delicious sensory information and overwhelm your forebrain with pleasure.
Eating this corn is one of those experiences.
This is third-date corn. Ten-year-anniversary corn. The-kids-went-to-bed-early corn. You-and-your-best-friend-getting-tipsy corn. Because, this corn is sloppy and messy and you have to use your hands, and there will be moaning. I know some of you are going to make this for a work potluck, anyway, but now you can’t say I didn’t warn you.
Preheat oven to 350 degrees
You’ll need a lightly oiled or sprayed glass baking dish. If you use an 8×8, you’ll make four servings. If you use a 9×13 you’ll make 6-8 servings.
4-8 ears of cleaned corn on the cob. Make sure it’s trimmed to fit width-wise in your baking dish.
Zest and fruit of 1 or 2 limes (1 for 4 serving dish, 2 for 6-8 serving dish)
1 tsp of snipped, fresh cilantro OR oregano per cob
2 TBS of crumbled feta per cob
1 TBS of heavy whipping cream per cob
salt and pepper
Cover baking dish with aluminum foil. This is important, you want the cobs to steam in the herbs and cream, contributing their juices to the mix, rather than roast.
Bake for 30-35 minutes. While baking, cut lime into wedges, one wedge per cob. When you check corn for doneness, you’ll see juices and cream rapidly bubbling in dish. Transfer corn to serving plate, pour over with remaining juices in dish. Serve with lime wedges, and squeeze lime wedge over cob before eating.
It will be messy, dripping, savory, tangy, and creamy. You’ll need multiple napkins for your face and hands. And you’ll do this over and over again, all summer long.
It’s that good.
